For those unfamiliar, Késarum means “saffron” in Sanskrit; a fitting name for a restaurant dedicated to preserving the richness of India’s ancient culinary heritage. In an age of rapid urbanisation, it’s all too easy for centuries-old recipes, passed down through generations, to fade away. But we believe that this timeless food knowledge is just as refined and sophisticated as classical French cuisine. Just like saffron being the world’s most precious spice, India’s culinary traditions deserve to be cherished, preserved, and shared with the world.
Many Indian eateries today are still dominated by dishes like “tikka masala” and “madras”. Both are creations of 20th-century Bangladeshi eateries in the UK; neither are authentic Indian, nor do these dishes don’t represent the incredible diversity of true Indian cuisine, which is a huge shame! India is a tapestry of flavours, with each region, state, and even village offering its own unique recipes and culinary techniques. From the north to the south, east to west, Indian cuisine varies dramatically, and we’re passionate about showcasing this diversity.
